Basically, when sharp books suddenly think something is more likely to happen, they lower their payout for that bet (by lowering the odds). Some books are slow to react, so we can get that same bet at that “old”, higher payout.
Example from this slip:
Props Builder moved Klay under 2.5 3PM from -116 to -139 in one swipe. However, Courtside still had it sitting at -110 odds.
Now it's not guaranteed to hit, but you're getting a better payout and getting this in before a slower book like Courtside starts trying to catch up to the sharper books in the market.
