Mongolian Ground Beef Noodles Servings: 4 Prep Time: 10 minutes Cook Time: 15 minutes Total Time: 25 minutes Ingredients For the Noodles: 12 oz (340g) wide rice noodles or lo mein noodles 1 lb (450g) ground beef 2 tbsp vegetable oil For the Sauce: ¼ cup soy sauce ¼ cup hoisin sauce 2 tbsp brown sugar 1 tbsp rice vinegar 1 tsp sesame oil ½–1 tsp red pepper flakes 3 cloves garlic, minced 1 tsp fresh ginger, grated For Finishing: 3 green onions, sliced (white and green parts separated) 2 tbsp sesame seeds, toasted Fresh cilantro, chopped (optional) Instructions Cook the noodles. Bring a large pot of salted water to a boil. Cook noodles according to package directions until al dente. Reserve ½ cup noodle water, then drain and set aside. Make the sauce. Whisk soy sauce, hoisin, brown sugar, rice vinegar, sesame oil, red pepper flakes, garlic, and ginger together in a small bowl. Brown the beef. Heat vegetable oil in a large skillet or wok over high heat. Add ground beef and break it up. Cook 4–5 minutes until deeply browned and crispy in spots. Add the white parts of the green onions and cook 1 minute. Add the sauce. Pour the sauce into the skillet. Let it bubble and reduce 2–3 minutes until glossy and coating the beef. Toss with noodles. Add the cooked noodles to the skillet. Toss everything together, adding reserved noodle water a splash at a time if needed to loosen the sauce and help it cling to every strand. Finish. Remove from heat. Top with green onion greens, toasted sesame seeds, and cilantro if using. Serve immediately. Tips High heat is the whole game — it gives the beef those crispy, caramelized edges. Don't drain the beef fat — it carries flavor and helps the sauce coat the noodles. Toss fast once noodles hit the pan — they soak up sauce quickly and can stick. Variations Swap ground beef for ground pork, turkey, or crumbled tofu. Add broccoli florets, snap peas, or shredded carrots for extra veg. Double the sauce if you like things extra glossy and saucy.

Cod Piccata with Capers and Lemon Butter Serves: 4 | Prep: 15 min | Cook: 15 min Ingredients For the cod: 4 cod fillets (6 oz each), about 1 inch thick 1/4 cup all-purpose flour 1/2 tsp salt 1/4 tsp black pepper 1/2 tsp garlic powder 1/2 tsp paprika (optional, for color) 2 tbsp olive oil 1 tbsp butter For the lemon butter sauce: 3 tbsp unsalted butter 3 cloves garlic, minced 1/3 cup dry white wine (Pinot Grigio or Sauvignon Blanc) or chicken broth 3 tbsp fresh lemon juice (about 1 1/2 lemons) 1 tsp lemon zest 2 tbsp capers, drained (plus 1 tsp caper brine, optional) 1/4 tsp red pepper flakes 2 tbsp fresh parsley, chopped Salt and black pepper, to taste For serving: Lemon slices or wedges Extra chopped parsley Angel hair pasta, rice, or crusty bread Instructions 1. Prep the cod Pat the fillets very dry with paper towels — this is the key to a good sear. Season both sides with salt and pepper. Mix the flour, garlic powder, and paprika on a plate. Dredge each fillet lightly, shaking off the excess so it's a thin coat, not a thick one. 2. Sear the fish Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. When it shimmers, add the fillets. Cook for 3-4 minutes per side, without moving them, until golden brown and the fish flakes easily. Work in batches if needed so the pan isn't crowded. Transfer the cod to a warm plate and tent loosely with foil. 3. Make the sauce Lower the heat to medium. In the same skillet, add the garlic and cook for 30 seconds until fragrant — don't let it brown. Pour in the white wine and let it bubble for 1-2 minutes, scraping up the browned bits from the bottom of the pan. Add the lemon juice, lemon zest, and caper brine if using, and simmer for 1 minute. 4. Finish with butter Reduce the heat to low. Whisk in the remaining 3 tbsp butter one piece at a time, swirling the pan, until the sauce is glossy and slightly thickened. Do this off a hard boil so the sauce doesn't break. Stir in the capers and red pepper flakes. Taste and adjust the salt, lemon, and pepper. The sauce should be bright and tangy, not heavy. 5. Combine Return the cod to the skillet, spooning sauce over each fillet. Warm through for 1 minute. Scatter over the parsley. 6. Serve Plate the cod and pour the lemon butter sauce over the top. Add lemon wedges on the side and serve over angel hair pasta, rice, or with bread to soak up the sauce. Tips Dry fish + hot pan = crisp edges. Any moisture on the fillet will steam it instead of searing it, and the coating will slide off. Flour lightly. A heavy dredge turns gummy in the sauce. Whisk the butter in off the heat or on low. High heat is what makes a butter sauce separate into grease. Capers are salty, so taste the sauce before adding more salt. Fresh lemon juice only. Bottled tastes flat and dulls the sauce. Other fish that work well: halibut, tilapia, snapper, or thin chicken cutlets (pound to 1/2 inch and cook the same way). No wine? Use chicken broth with an extra squeeze of lemon and a splash of white wine vinegar. Serve immediately. The coating softens as it sits in the sauce.

Thai Chicken Meatballs in Coconut Curry Serves: 4 | Prep: 25 min | Cook: 30 min Ingredients For the chicken meatballs: 1 lb ground chicken (or ground turkey) 1/2 cup panko breadcrumbs 1 egg 3 tbsp red curry paste 2 tbsp cilantro, finely chopped 2 cloves garlic, minced 1 tbsp fresh ginger, grated 1 tbsp fish sauce 1 tsp lime zest 1/2 tsp salt 1/4 tsp black pepper 2 tbsp oil for searing For the coconut curry sauce: 1 tbsp coconut oil or olive oil 1 small onion, finely diced 3 cloves garlic, minced 1 tbsp fresh ginger, grated 3 tbsp red curry paste 1 can (14 oz) full-fat coconut milk 1/2 cup chicken broth 1 tbsp fish sauce 1 tbsp brown sugar or palm sugar 1 tsp lime juice 1/2 tsp turmeric (optional, for color) 1/2 cup cherry tomatoes, halved (optional) 1/2 red bell pepper, thinly sliced (optional) Salt, to taste For serving: Steamed jasmine rice Fresh cilantro leaves Thai basil or mint Sliced red chili Lime wedges Instructions 1. Make the meatballs In a large bowl, combine ground chicken, panko, egg, red curry paste, cilantro, garlic, ginger, fish sauce, lime zest, salt, and pepper. Mix gently with your hands just until combined — overmixing makes them dense. Roll into 16-18 meatballs, about 1 1/2 inches each. Wet your hands slightly to keep the mixture from sticking. 2. Sear the meatballs Heat oil in a large skillet over medium-high heat. Add the meatballs in a single layer (work in batches if needed) and sear for 2-3 minutes per side, until browned all over. They don't need to be cooked through yet. Transfer to a plate. 3. Build the curry sauce Lower the heat to medium. In the same skillet, add coconut oil, then the onion, and cook for 3-4 minutes until softened. Add garlic and ginger and cook 30 seconds until fragrant. Stir in the red curry paste and cook for 1 minute, letting it bloom and darken slightly. 4. Simmer Pour in the coconut milk and chicken broth, whisking to dissolve the curry paste. Add fish sauce, brown sugar, lime juice, and turmeric. Bring to a gentle simmer. If using, add the bell pepper and cherry tomatoes now. 5. Finish the meatballs Return the meatballs to the skillet, nestling them into the sauce. Simmer gently for 10-12 minutes, turning once or twice, until cooked through (165°F internally) and the sauce has thickened enough to coat a spoon. Taste and adjust — more fish sauce for salt, sugar for balance, lime for brightness. 6. Serve Spoon over steamed jasmine rice. Top with cilantro, Thai basil, sliced red chili, and a squeeze of lime. Tips Chill the meatball mix for 15-20 minutes before rolling — they hold their shape much better and sear cleaner. Don't boil the sauce once the coconut milk is in; a hard boil can make it split. Keep it at a gentle simmer. Curry paste varies wildly in heat. Start with 2 tbsp in the meatballs and 2 tbsp in the sauce, then adjust. Mae Ploy and Maesri are good, punchy brands. Make it soupier: add an extra 1/2 cup broth and serve in bowls over rice. Add vegetables: zucchini, snap peas, or baby spinach stirred in during the last 5 minutes all work well. Meatball swap: ground pork or a pork-chicken mix gives a juicier result. Make ahead: sear the meatballs and blend the sauce a day ahead; simmer together before serving.

Creamy Mushroom Chicken Bake Prep time: 15 minutes Cook time: 35-45 minutes Total time: 50-60 minutes Servings: 4 Oven temperature: 190°C Ingredients Chicken and Mushroom Sauce 4 boneless, skinless chicken breasts 300 g mushrooms, sliced 2 cloves garlic, minced 1 tbsp olive oil or butter 1 can (approximately 300 g) cream of mushroom soup ½ cup (120 ml) heavy cream or sour cream ½ cup (120 ml) chicken broth, as needed 1 tsp garlic powder Salt and black pepper, to taste ½ tsp dried thyme (optional) Crispy Breadcrumb Topping 1 cup breadcrumbs or panko 2–3 tbsp melted butter ¼ cup grated Parmesan cheese (optional) Garnish 2 tbsp fresh parsley, chopped Method Prepare the oven: Preheat to 190°C. Lightly grease a baking dish. Season the chicken: Pat the chicken breasts dry and season with salt, black pepper, and garlic powder. For extra flavour, sear in hot oil for 2–3 minutes per side until lightly golden. Cook the mushrooms: Heat the butter or oil in a skillet. Add the sliced mushrooms and sauté for about 5 minutes until softened and lightly browned. Stir in the minced garlic and cook for another 30–60 seconds. Prepare the sauce: Add the cream of mushroom soup, cream, chicken broth as needed, and dried thyme. Stir until smooth, then season to taste. Assemble the bake: Arrange the chicken breasts in the prepared baking dish. Pour the mushroom sauce over the chicken, distributing the mushrooms evenly. Prepare the topping: Combine the breadcrumbs with melted butter and Parmesan, if using. Sprinkle evenly over the sauce. Bake: Bake for approximately 30–40 minutes, depending on the thickness of the chicken. If the topping browns too quickly, cover loosely with foil. The chicken must reach an internal temperature of 74°C in the thickest part. Garnish and serve: Rest for 5 minutes, sprinkle with fresh parsley, and serve hot. Chef’s Tips Use panko breadcrumbs for a lighter, crunchier topping. Brown the mushrooms properly to develop a deeper, savoury flavour. Avoid adding too much broth; the sauce should remain creamy rather than watery. #MariamFoodLab
