"we should be able to critique fanfic" well ok but who do you think you are that you're so qualified to give critique lol
because it really comes to a point when the question becomes less "why are fanfic writers like this?" and more "why are you still choosing a medium that clearly doesn't give you what you want?"
TLDR: you don't have to stay in a hobbyist space and then resent hobbyist standards.
