Vegan restaurant owners don't get nearly enough respect and admiration. For so many of them, they are putting all their time into a business with brutal margins and a high rate of failure in order to make vegan food more accessible. I don't think most people with normal jobs appreciate just how tough it is to survive in the restaurant business, particularly the *vegan* restaurant biz. If you can afford it, you can make a big difference by eating at these places more often!
Here's one to share.

🥕🥦🍆Your local market has dozens of different vegetables. What a shame to buy the same few items every time you shop. This week, why not make a point of purchasing a few varieties you have never prepared, or haven't eaten in ages? Beyond livening up your salads, almost any vegetable is great roasted or in stir-fries.
