First class dinner @StickyWalnut with a perfectly cooked grouse with all the trimmings. A rare thing these days a restaurant offering grouse on their menu in this part of the country. Thank you.
Veal stock finished. After 5 kilo of bones, lots of mirepoix and some decent red wine. Steak ‘au poivre’ on the menu.
I’m amazed that this wine tastes so good considering it’s age. It’s the year I took over Hilaire Restaurant from the legendary chef Simon Hopkinson. Just a shame I didn’t taste it before I put half of the bottle into my veal stock!

Helping with some fancy Sunday lunches today at Chester Races. Ceviche of sole. Roast beef with Yorkies stuffed with short rib and sherry trifle. Not my style but very good especially the very tasty beef.
