McDonald's lists potatoes, vegetable oil with natural beef flavor, dextrose, sodium acid pyrophosphate and salt. There's no starch, flour or leavening on the McDonald's list.
The starch, rice flour and leavening are a clear coat, put on at the potato plant before the fries are par-fried and frozen. A fry goes limp when moisture from the inside moves out to the surface, and a heat lamp speeds that up. A 1999 patent for a clear coat of starch, dextrin and rice flour says coated fries can be held under a heat lamp without much loss of crispness. McCain sells a coated fry it says stays crisp for up to 30 minutes.
