A new lager beer, in collaboration with the @StelkensLab, us 😅 and NilsOscar brewery, has seen the light. Indomitus lager brings the Patagonian Andes essence to a bottle. Out of hard scientific work, happy to see this happening 👏🏻👏🏻🍺🍺
We made a new lager beer! "Indomitus" for wild and untamed. Brewed with a wild yeast strain from Patagonia, this is the result of a super fun collaboration (and lots of hard work) with Francisco Cubillos, Chile @FcocubillosR and Andrés Furukawa at the Nils Oscar Brewery, Sweden

Welcome 2026 & our first submission. Here with @pablovilla81 & #Diego Libkind & colbs we dissected the S. eubayanus host preferences. Long story short, using 470 seq. we found that bark composition determines the yeast genomic structure.
