Clotted cream is the richest dairy product in the British kitchen, nearly two thirds fat, and it was invented as a way of keeping milk in a county with no ice.
The method is older than anyone can trace. Fresh milk from the morning is left in a wide pan until the cream rises, then the whole pan is set over a very low fire or in a cooling bread oven for hours, never boiling, until a thick crust forms on top the colour of old gold. It cools overnight and the crust is lifted off with a skimmer. That crust is the cream, and the scalding is what kept it. Heated that way it lasted for days when fresh cream would have turned by teatime.
Devon and Cornwall argued over it for centuries and still do. The Cornish got the legal protection in 1998, on condition that the milk is Cornish and the fat is at least fifty-five per cent, though the good stuff runs higher. The argument about whether the cream or the jam goes on the scone first has split the two counties for as long as there have been scones, and it is the only question in British food that people will genuinely fight over.
If you grew up in the West Country it came in a cardboard tub with a crust you broke through with a knife, and it went on everything: the scone, the apple pie, the porridge, a spoon of it straight off the blade when nobody was looking. A pot sent by post to a relative in London was the standard Christmas present from Cornwall for a hundred years.
It is milk with the water taken out and the fat left in, and it was the ordinary household food of the two poorest counties in England.
The cream tea is now a treat you drive to and photograph. In 1930 it was what a dairy farmer's wife did with Tuesday's milk, and the fat was the whole point of doing it.

Walker: "I nearly bought a wool jumper in town. £140. Nice work if you can get it."
Farmer: "I got about £2 for the fleece."
Walker: "£2?"
Farmer: "Per sheep, per year. Clipped it off her in two minutes, rolled it, bagged it, drove it to the depot. The cheque for the whole flock didn't cover the diesel."
Walker: "Then who's getting the £140?"
Farmer: "Not me, not the shearer. He costs me more per sheep than the wool fetches. I pay to have it taken off."
Walker: "So you lose money shearing."
Farmer: "Every year. And I can't not shear, or she cooks in July and the flies eat her alive. The wool's a welfare job that used to be an income."
Walker: "Sell it yourself, then. Cut out the middleman."
Farmer: "Not allowed. By law it goes through the board. Has done since 1950. I can keep a fleece for the wife to knit with, and that's about the extent of my freedom."
Walker: "So where does it go?"
Farmer: "Washed in Bradford, if we're lucky. Shipped to China, spun, knitted, shipped back, and sold to you with a label about heritage. By the time it's in the window there are eleven people between us and I'm the only one who met the sheep."
Walker: "That's mad."
Farmer: "My grandfather paid the rent on the wool cheque. I pay a man to take it away. Same sheep, same hill, same jumper in the window. Only the price of the farmer went down."
Walker: "What would fix it?"
Farmer: "You buying the jumper. And asking them where the other £138 went."

🔴@Helen_Whately, Shadow Secretary of State for Work & Pensions, has claimed £2 MILLION expenses in 10 years.
£300,000 relates to her own travel and accommodation - yet she only lives 50 miles from London.
Her boss, @KemiBadenoch has 3 children, claims £2.7K per month to rent a 6 bed farmhouse & tried to claim expenses for a family holiday.
The country can't afford these @Conservatives.

I’ve been detained by the IDF, along with a group of rabbis & volunteers. We were simply harvesting olives in a grove near Nehalim in the West Bank.
The occupation is a crime under international law. Harvesting olives isn’t a crime under any law I know.
We should take our water into public ownership WITHOUT COMPENSATION - starting with Thames Water. Spot on @ewan_mg

The biggest benefits claimant in the UK.
They claim an eye watering £17,500,000,000 a year.
The same as 4.4m people on benefits.
How?
Because they claim ALL their costs, every wage, every oil rig, every tanker.
Completely nationalised, but the profits are Privatised.

One week ago, we captured congestion levels around Oxford's private schools in their final full week of term. Now, most have broken up, days before their state school equivalents do.
This comparative data capture allows us to quantify individual sources of congestion in Oxford.

60 years ago today 144 people died in the Welsh village of Aberfan when a colliery spoil tip collapsed onto them. 109 of those were children attending the village school. A tragedy that broke hearts, which remain broken now. The strength and courage shown by that community is an example to us all.

OPEN LETTER: Sally Rooney is a writer, not a terrorist. Her books must be available to the public. Their withdrawal from sale, on the basis of ill-conceived and draconian anti terror legislation, is an affront to basic principles of free speech and expression so long taken for granted in this country. We categorically reject censorship - whether direct or indirect - and urge the government to change course, amending the legislation which has led us to this point of repressive absurdity.

Looks like @X and @ElonMusk don't like the hashtag #ElectionHeroesVoteEarly because accounts sharing it are being suppressed AF.
Mine is more throttled than ever, with reach down over 75%. I expect it to get worse over the next 14 days.
This is not Morgan J. Freeman fatigue.
This is a pathetic racist rapist career crook -- who's terrified of losing power and going to jail -- accepting Musk's help.
Censoring this platform is election interference.
VOTE VOTE VOTE this shit weasel out of power, and let's put our country on the road to healing.
We deserve it!

The 5-day, 40-hour work week was standardised a century ago.
Almost everything else has sped up dramatically since then - automation, robotics, computers, the internet, emails - so why are we still plodding along on Henry Ford’s schedule?
It’s time for a 4-day week. ⏰

🚨 BREAKING: Almost 9 MILLION people across the UK are at risk of needing a food bank in the next year.
One in five people have run out of food in past year and been unable to afford to buy more.
This cannot continue. The government must act ahead of the Budget to make essentials like food and bills affordable.

And the environment charities does what exactly?
